Well, here I am, finishing up day 2 of my Whole30 challenge. I don't want to jinx myself, but so far so good. :) I can't say that it has been EASY, but it hasn't been a spirit breaker either.
And here is something awesome - my two kids, ages 10 and 7 are enjoying the experiment so far!! Now, I'm not making them follow my eating plan, but they have been invited to eat anything of mine that they'd like. For breakfast on Day 1 I made "egg cupcakes". Basically scrambled eggs, and a ton of fresh veggies poured into muffin tins and baked. The kids GOBBLED them up for breakfast today.
So far the only thing that I really miss is the artificial sweetener and honey that I used to put in my tea. That's not so bad. Oh, the other thing that I miss is not being able to get on the scale. (That is part of the program, not weighing yourself for the entire 30 days.) After a perfect day 1, I really wanted to get on the scale this morning to see if I would be rewarded with a smaller number. But, I will follow the rules and weight myself only after I finish.
On to Day 3!!!
